Prawn, Pork and Chicken Dumplings
To cook these dumplings I was able to use my Sieman’s Compact steam oven set a 100 degrees and they took eight minutes, other methods make take a little longer.
Ingredients
Protein
300 grams lean pork roughly chopped
300 grams chicken thigh fillets roughly chopped
300 grams green prawn meat
Two packets round wonton wrappers
Aromatics
2 Cloves garlic
2 Birdseye chillies
1 Stem chopped lemon grass, white part only
1 Small knob fresh ginger chopped
Salt and Pepper
Sesame oil
Olive Oil
Method
Blitz aromatics in a small food processor bowl
In a large food processor blitz chicken and pork
Add aromatics, salt and pepper, add oils, just enough to moisten a little
Add prawn meat and blitz for a few seconds, you want the prawns a little chunky
Take a tablespoon of mixture and put in the centre of a wonton skin, moisten edges with water to seal and crimp to seal
Steam in a steam oven/metal steamer pot/ bamboo steamer for 8-10 minutes. Test one to make sure it’s done, serve and enjoy.
I usually make my own dipping sauce
Palm Sugar
Fish Sauce
Lemon/Lime juice
Kaffir lime leaves
Birdseye chilli
Shred lime leaves after removing centre stem, grate palm sugar into a bowl, add equal parts fish sauce and juice. add finely chopped chilli add more fish sauce or juice to suit your taste.
